WIAW, Fitness Edition (or lack thereof)

So I still have more Europe details that I want to share (only 1 more post … I promise!), but I’m taking a break for today because it’s Wednesday!  And Wednesday means …

Breakfast:

Lunch:

Leftover chicken stir-fry.  So delicious and so healthy!  Go check out the recipe.  It’s an oldie, but a goodie! Winking smile

I’m still loving cherries!  I will be so sad when they go out of season!

Dinner:

This plate, x2.  Believe it or not, I’m back to cooking in the old crock pot!  These were steak tacos, and they were delicious!  Recipe to come soon! Smile

(I topped the tacos with guacamole, which was probably my favorite part.  If you’ve never made homemade guac, you need to, stat.  It’s so easy and so incredibly tasty!)

Dessert:

Another one of Katie’s amazing dessert ideas!

Last time, I tried Katie’s Deep Dish Cookie Pie.

And it was dangerously good.

This time, I made her Chocolate Chip Blondies.

And they were equally amazing. Winking smile

I’d say the blondies were very similar to the cookie pie, except there’s peanut butter in the blondies and not in the pie.  So the blondies tasted more like a chocolate chip, peanut butter cookie.

And I loved every bite. Winking smile

This month is also supposed to be about fitness, but I can’t lie.  Since getting back from Europe, I have literally done zero working out. Zip.  Zilch.  Nada.

My lame excuse?  I just started my new job, and my current gym is a good distance from both my work and my house.  And I don’t feel like driving over there.  Sad, but true.

So I think I’m going to switch to a new gym, because if I don’t, I know I’ll never convince myself that the drive is worth it!  It was no big deal in the summer when I wasn’t working full time, but now, it’s a different story!

Since I didn’t do anything fitness-related this week, let’s talk about the Olympics instead!  After all, just watching the Olympians perform makes me more fit, right? Winking smile

What has been your favorite event to watch?  For me, it’s definitely gymnastics.  I just love Gabby Douglas!  And my heart broke for Jordyn Wieber when she was crying after failing to advance to the individual all-around competition!  All of those young women are so incredibly strong and talented.  I’m amazed at what they can do with their bodies.

On a (somewhat) related note, I took gymnastics when I was a kid.  I couldn’t even do a back walkover, after about 3 years of classes.  Heck, I could barely do a one-handed cartwheel!

    My husband and I honestly can’t eat store-bought guacamole anymore ever since I started making it at home…. it’s so much better, and it’s so easy!!
    I’m loving the Olympics recently… especially last night! I was an emotional mess watching it!

    Ahh that dessert looks great. Yep I agree not to tell the partners that it’s made from chickpeas…mine would probably run a mile! Damn you Americans, doing so well in the Olympics, congrats. Britain is doing us proud though we are trailing quite substantially…

    Love all of Katie’s dessert recipes. She seriously makes the most creative & delicious foods. So jealous haha.

    We are all about the Olympics over here :) I’m so happy that the U.S Women Gymnastics won last night. Jordyn did friggen amazing too!! The hubs looked @ me like I was a freak when I started clapping once they clinched the title, haha.

    I was in competitive All-Star Cheerleading so I was a pretty good tumbler. I couldn’t do two full twists like they do in the Olympics, but I could nail one :)

    I don’t have a favorite meal so far this week, however I did just have an amazing lunch. It consisted of “salad pita bowl” filled with 2 eggs, tomatoes, cucumber, laughing cow cheese and topped with a tiny bit of salsa.. and a yogurt with cinnamon. Soo friggen good!

    I want some of that dessert! I used to take dance as a kid and I was terrible! I had no clue what I was doing in my recitals! I did however end up majoring in dance in college so I guess something eventually clicked for me!!

    I took both ballet + gymnastics growing up, although i haven’t done so much as a cartwheel in probably 5 years! i’ll leave the leaps + twists to the Olympians. =) love a cookie pie, by the way, + that one looks fab!

    I need to try those blondies! I love the idea behind Katie’s recipes, but some of the ingredients are harder to find and/or are kind of pricey. I think the blondies and cookie pie are do-able though. ;)

    I’ve been LOVING the gymnastics, volleyball, and swimming! I took gymnastics for like one year when I was little. Apparently it wasn’t my thing. Haha.

    I’ve made a ton of Katie’s recipes and they are all amazing. I made those blondies for a party and they were a big hit!

    Sadly, I haven’t seen any of the Olympics! We don’t get any “normal” channels. Boo. I guess I’ll have to look up clips on youtube!

    My favorite workout this week was Tina’s burpee circuit that I did yesterday morning. Yowza am I sore!

    I love watching gymnastics too! I almost cried when they won the gold medal! And yes, I took dance and gymnastics for years when I was younger, and I couldn’t even do a back-bend by myself. I’m convinced that talent like that cannot be learned, those girls are born with something special!

    I wanted to take gymnastics classes my entire childhood, my parents finally obliged when I was 12 (yep, a little on the old side to start) but I advanced pretty quickly onto the competitive team – placed at state when I was 14 – that was my claim to fame in life, granted at 14 most people were at a higher level than I was, but hey, I looked like I was 10 LOL! I lived for gymnastics and also cheering, so when I stopped gymnastics I continued cheering into college. Ah, the memories! So, without question, gymnastics is my favorite event in the Olympics, though I love swimming, diving, and this year excited about Triathlon. I’m on a taper week since I have a Tri on Sunday, so easy workouts this week : )

    Also, I am not officially craving stir fry in a way that just adding Braggs aminos to my salad at lunch won’t satisfy. Good thing I’m going to Whole Foods for lunch…there is a hot bar of goodness ahead!

    Speaking of Whole Foods, I got the BEST cherries there for my cooking class on Monday. I will be sad when they go. They are so darn expensive.

    The blondies look fantastic. I’m definitely going to have to try those. I do a chocolate pudding with avacodo and you’d never know it. I got the recipe from http://www.NaturallySweetRecipes.blogspot.com.

    As a kid, I did gymnastics for fifteen years, and I get nostalgic every time I watch it. I cried for the winners and the losers last night. I also ran through an old beam routine in my living room, and I’m lucky I didn’t injure myself!!

    I took gymnastics too as a kid! I could do a walkover but with my right leg which makes sense since I am right handed, but could only do left handed cartwheels. Everyone was all up in arms about it but I don’t really remember why?! HA! I loved gymnastics, I wish I would have done it longer.
