Today’s post is going to be quick, because it’s been a busy week in our household. All wonderful things, though … a Bible study with some great friends on Monday evening, followed by a church community group event on Tuesday evening.

Breakfast:
This is a food “blast from the past.” When I was a kid, my mom used to make me this breakfast all the time, and I had a craving this week.
It’s just a bagel with cream cheese and bacon in between. I tried to make it slightly healthier by using a whole-wheat bagel. Oh, and I had a glass of milk. Totally healthy, right?
But I don’t care … it was completely delicious and brought me back to childhood! ![]()

Buitoni Whole-Wheat Four-Cheese Ravioli, served with an alfredo sauce. Quick and easy!
Dinner:
A Caesar salad +
a “homemade” French bread pizza! ![]()
This idea was one of those ideas that you find on Pinterest and you think, why didn’t I think of that??
The original idea came from this website.
Basically you just preheat the oven to 500 degrees (you want it HOT!), slice your French bread open, and top it with sauce, cheese, and whatever toppings you want.
Then bake it for just 5-6 minutes. The crust gets nice and crusty, and the cheese is perfectly melty (I don’t think that’s a word, but go with it).
A large loaf of French bread would normally serve 4 people, but since my husband is a human garbage disposal (love you, dear!
), he ate an entire half himself, and then I ate my portion across two separate nights.
It was quick, cheap, and delicious. Two thumbs up! ![]()

My favorite meal this week by far was spinach and cheese ravioli topped with zucchini, onions, red peppers and brussles sprouts! I also added tomato basil marinara and it was amazing.
One food I found on Pinterest and had a “duh” moment was pumpkin cupcakes. Two ingredients and you’re done! Plus they’re healthier than others and actually taste amazing.
So a can of pumpkin and a box of cake mix, right? I think I’ve seen that before … I need to try it!

Sometimes we just need to eat bagels! and they are so good when we do! Panera ones are the best! I just made my dinner off of a pinterest find yesterday! so yummy!

I know this sounds strange, but my absolute favorite bagel sandwich when I was a kid was bagel (had to be Lender’s brand and had to be white) cheese (simple processed American) tomato (fresh sliced from the garden) and onion (thick slice vidalia onion) sandwich with salt and pepper! It just screams childhood to me. My husband always cracks me up and asks where’s the meat? Lol!

I think the best thing I ate this week so far was a really simple sandwich made with ham and a delicious gouda, pressed and melted. My sister asked me to make her another one. lol. So did Lucas. And I am with you on the bagel! My favorite one growing up would be one I would make with cream cheese, dijon mustard (always mustard-my obsession)then sliced turkey on top with one piece of provolone cheese. I’d nuke it for a few seconds only so that the cheese on top would melt.. it was the most delicious.. still is bagel sandwich I’ve had.

We love French Bread pizzas. We discovered them recently too. I have been meaning to tell you that I made your recipe for the spaghetti with olive oil, garlic, and red pepper flakes…Yum!!! We liked it so much last week that I made it again this week.

Bagels + Cream Cheese + Bacon= Da bomb
You should try it with chive cream cheese next time! Absolutely phenomenal. Also, I have an entire Pinterest board called “Why Didn’t I think of that?” and the most brilliant thing I found was lining a coffee cup with tin foil when your grease jar is full. Line a coffee mug with the foil, pour hot bacon grease into it and when it solidifies, all you have to do is wrap up the tin foil and throw it away. Brilliant!
