So my mom and I made a pretty awesome meal the other night, and I wanted to share it with all of you!
For dinner …
… a Mexican feast!
I made the same guacamole and black bean and corn salsa that I made a couple of weeks ago.
Then I brushed a combination of olive oil, lime juice, and cumin onto several shrimp skewers, and quickly cooked them on the grill.
The end result?
Shrimp tacos, with blue corn tortilla chips for extra dipping!
I think next time, I would use flour tortillas instead of corn (I’m not a fan of store-bought corn tortillas). And I would add an extra squirt of lime juice onto the shrimp before serving, for some extra brightness. But overall, it was a very satisfying dinner!
And then came dessert …
(My mom tried to help me with my food “photo shoot.” It looks like an Olan Mills photo, circa 1989. I love it.)
Mixed fruit with mascarpone cream
Ingredients:
- 1/4 cup whipping cream
- 4 oz. (half of a container) of mascarpone cheese
- 1/2 tsp vanilla extract
- 1/3 cup powdered sugar
- Fruit of your choosing (we used strawberries, blueberries, and grapes)
Directions
- Using an electric mixer, whip the cream until peaks form.
- Add the mascarpone cheese, vanilla, and powdered sugar and beat until combined.
- Serve over fruit.
- Enjoy!
This dessert was sweet, light, and delicious. I highly recommend trying it. The dessert, that is. Not the Olan Mills photo shoot. You can’t steal that genius idea. ![]()

That’s easy … frozen yogurt or ice cream! But this dessert definitely gave ice cream a run for top place!

Mmm I love some shrimp tacos! The Olan Mills thing cracks me up – reminds me of these family pictuers my mom got us to do one year (we weren’t a family portrait type of family).

Yum! That dessert looks awesome! The shrimp tacos do as well, but I’d probably opt for fish just b/c shrimp weirds me out. It’s a texture thing that I’ve had since I was a kid. Kinda sucks since I live right on the ocean
I cracked up with the Olan Mills comment too! I swear we have a studio right down the street from where I live, but I have no clue if it is open anymore! As for dessert…I like anything sweet!

I wanted to do fish tacos, but my mom doesn’t really like fish, so we went for shrimp. But I think GOOD fish tacos are probably one of my favorite foods!

Those can actually be found at Walmart or Publix. They are these individual packets that you stick in the freezer, and you can get them in flavors like margarita, pina colada, etc. But they are actually made with wine … although you’d never know it! My mom buys them all the time, so we split one of the margarita-flavored ones that night.
