Slow Cooker Buffalo Chicken Sandwiches

Happy Monday, friends! Smile

Just a quick update … our 10k on Saturday went really great.  Thanks for all of your support!  I plan on posting details and pictures tomorrow, so stay tuned! Winking smile

———————————-

Last Saturday, all I wanted to do was hang out with Brandon and watch college football.

So I make a recipe that:

1. Is ridiculously easy,

2. Is really tasty, and

3. Is meant to be eaten while watching football!

007

Slow Cooker Buffalo Chicken Sandwiches!

You can find the original recipe at Allrecipes.com.

I follow the recipe pretty closely, with just a couple of small changes.

This time, I cut the recipe in half, but normally I do the full 6 servings, because it makes great leftovers!

So I put the chicken breasts into the crockpot …

146

… and add the buffalo wing sauce and ranch mix.

149

Then I cook it on low for about 5 hours.

001

Here’s the key … take the chicken out and put it in a bowl.  Shred the chicken with two forks …

003

… and stick it back into the crockpot.   Stir it around so that it soaks up all of the yummy liquid.

004

Cook the mixture on low for another hour or two.  Then add your butter and stir.

005

Note: The first time I made this, I forgot to add the butter, and we still thought it tasted really good.  So if you want to save a few calories, just cut down on the butter … or leave it out altogether!

I serve mine on whole-wheat buns with a side of sweet potato fries.

009

Brandon likes his plain, but I prefer to add a little low-fat ranch dressing on top.

011

Another great idea?

013

Serve the shredded chicken with some baked tortilla chips for an awesome dip.  I make a really good buffalo chicken dip (I’ll post that recipe another time), but it’s pretty unhealthy, so this is a much healthier substitute! Smile

Question for ya …

What’s your favorite football-watching food??

Do you like spicy foods??

That looks delicious – perfect for a football watching day. I love hot queso dip for football games. The only problem is that I always end up eating WAY too much by the time the game is over. :)

Thanks for commenting, Theresa! Buffalo chicken and football just seem to go together, don’t they?? Kind of like cookies and ice cream. Or cake and ice cream. Or just me and ice cream! ;)
