Last Saturday, all I wanted to do was hang out with Brandon and watch college football.
So I make a recipe that:
1. Is ridiculously easy,
2. Is really tasty, and
3. Is meant to be eaten while watching football!
Slow Cooker Buffalo Chicken Sandwiches!

I follow the recipe pretty closely, with just a couple of small changes.
This time, I cut the recipe in half, but normally I do the full 6 servings, because it makes great leftovers!
So I put the chicken breasts into the crockpot …
… and add the buffalo wing sauce and ranch mix.
Then I cook it on low for about 5 hours.
Here’s the key … take the chicken out and put it in a bowl. Shred the chicken with two forks …
… and stick it back into the crockpot. Stir it around so that it soaks up all of the yummy liquid.
Cook the mixture on low for another hour or two. Then add your butter and stir.
Note: The first time I made this, I forgot to add the butter, and we still thought it tasted really good. So if you want to save a few calories, just cut down on the butter … or leave it out altogether!
I serve mine on whole-wheat buns with a side of sweet potato fries.
Brandon likes his plain, but I prefer to add a little low-fat ranch dressing on top.
Another great idea?
Serve the shredded chicken with some baked tortilla chips for an awesome dip. I make a really good buffalo chicken dip (I’ll post that recipe another time), but it’s pretty unhealthy, so this is a much healthier substitute! ![]()

That looks delicious – perfect for a football watching day. I love hot queso dip for football games. The only problem is that I always end up eating WAY too much by the time the game is over.

Those sandwiches look great! I need to get myself a crockpot, But I havent taken the plunge quite yet. I love nothing more then buffalo chicken ANYTHING especially when football is added into the mix…We actually made a good buffalo chicken dip to watch during football as well!
