(Yes, I’m fully aware of the misspellings in the title. Just go with it, “K”? )
Because I’m pretty new to cooking, I would say that I follow a recipe about 90% of the time.
But there are those few times when I throw caution to the wind, throw whatever sounds good into a dish, and cross my fingers.
As I was looking through my picture albums from the last couple of months, I realized that I hadn’t shared many of my “random” dishes with all of you! So here’s just a few for your viewing pleasure.
1. Let’s start with breakfast.
For those of you in the “healthy living blog-world,” this first meal won’t look quite so random.
But for the rest of you … ever heard of “oats in a jar??”
Yes, I literally mean oats in a jar.
All you do is take a nearly empty peanut butter jar …
… and add a 1/2 cup of dried oats.
Then add whatever liquids you typically add. I did a mixture of 1/2 cup milk and 1/4 cup water.
Put the top back on the jar and refrigerate overnight. The next morning, add your mix-ins, like brown sugar and vanilla.
Some people eat theirs cold, straight out of the refrigerator. But I preferred to heat mine up. So I heated it for about 1 minute and 30 seconds. Then I added sliced bananas and some chopped walnuts.
This breakfast was delicious. I had never understood what the fuss was about … until I tried it. For some reason, everything just blended together perfectly in the jar. It’s so so good.
2. Now for a random salad dressing …
… a little BBQ sauce mixed with Ranch dressing. There’s a BBQ Chicken Salad at Panera that I love, and it includes a combination of BBQ sauce and Ranch. So I tried the combo on a simple spinach dressing and it was awesome!
3. Next comes dinner. The other night, I was trying to figure out what I could make with a few random ingredients that were left in my fridge.
- Two eggs (leftover from the great pancake disaster of 2011)
- Two random strips of precooked chicken (leftover from my BBQ chicken pizza)
- One tortilla (from my shredded chicken fajitas)
- Some salsa (again from the fajitas)
- Cheddar cheese (from both my BBQ chicken pizza AND shredded chicken fajitas)
I ended up making this:
A cheesy egg burrito.
I scrambled the two eggs with a little milk and some salt and pepper.
Then I cooked them on medium-low with the chicken pieces and some cheddar cheese.
After everything was cooked, I piled it onto a warm tortilla and added some salsa.
This was surprisingly really tasty! I would definitely make this again. But next time, I’d add a little cilantro for even more flavor!
4. And last but not least, dessert. Probably the most random thing on this post.
Half of a frozen banana, topped with caramel and chopped Nilla wafers.
I know. It’s totally weird. But when my sweet tooth starts raging and we don’t have any chocolate in the house … well, you never know what might happen.
