Hi again!
Today has been a very productive day. First, I started off with a morning run… actually, I started off discovering that I am NOT a treadmill runner. Nope, not at all. Not a fan.
It just feels different. Anyone agree? After a whopping 5 minutes on the treadmill, I made my exit from the YMCA and took for the streets. I ran about 3 miles and walked another mile.
And another conclusion…I think I run better when I run with someone. Or maybe it’s just running with Brandon specifically. When I’m running with him, I seem to push myself harder because I’m stubborn and I don’t want a boy to beat me. Ridiculous, yes. But true.
So today I was running by myself, and I was just all in my head. I kept thinking how body parts hurt and checking my Nike Sports band to see how much longer I needed to run before I could take a walk break. Blah. But hey, at least I made it through! I accomplished what I wanted to accomplish for today, which is always a great feeling!
Then this afternoon I went in to Lima to get my hair-did. This was long (literally) overdue.
I go to a woman named Kathy Schmenk. She’s great. She does Brandon’s parents’ hair, and after some woman did a hack-job on my hair last summer (no really… even Brandon’s dad noticed!), Kathy came in on her day off to fix it for me because I was having my bridal shower the next day and didn’t want to look lopsided. Wasn’t that nice of her?
I asked that she take a couple of inches off and add some more low-lights because it was feeling a little too blonde. And here’s the final product (please excuse the extreme close-up of my face!):
I know, not a big difference. But it feels a lot lighter on my shoulders haha!

Dinner
Tonight I was alone for dinner, because Brandon had some very important work-related business to attend to.
Translation: he was golfing with his work buddies.
So I just wanted to throw something together quickly.
First I made a salad with my favorite vinaigrette. It’s really easy and so much better than the stuff in a bottle, in my opinion (not knocking bottle dressing because I still use it… I just prefer the homemade stuff 9 times out of 10).
Red Wine Vinaigrette (serves 2):
- 1 tsp honey mustard (or you can use coarse ground mustard, if you prefer)
- 1.5 tbsp red wine vinegar (I like a lot of vinegar in mine, but you can reduce the amount)
- 1 tbsp extra virgin olive oil
- salt and pepper to taste
Combine the honey mustard and vinegar, then whisk in the olive oil. Add salt and pepper to your taste.
This is also delicious on spinach with dried cherries and red onions. Yum!
I also cooked up a tilapia fillet and had it with my leftover roasted potatoes from last night.
Ingredients for Tilapia (for 2 people… I just halved it tonight):
- 2 tilapia fillets
- 1 tsp minced garlic
- 1 tbsp olive oil
- juice of half of a lemon
- 1/2 tsp of parsley
Directions:
- Preheat oven to 400 degrees and spray baking pan with cooking spray.
- Rinse fillets with cold water and pat dry with a paper towel.
- Sprinkle with salt and pepper, if desired, then put on baking sheet.
- In a small saute pan, heat olive oil on medium heat. Add garlic and saute for 1-2 minutes, until brown and fragrant.
- Remove from heat and add lemon juice and parsley.
- Brush (or pour) mixture onto fillets.
- Bake about 10 minutes, or until fish flakes easily with a fork.
Added my potatoes and salad, and it was a nice light meal.
Now all of that being said, I gotta be honest. This was good, but I think I enjoyed my other tilapia recipe (see: Healthy Husband, Happy Wife) even more… only because I enjoyed the brown crust that the flour made from cooking in the pan. But they were both enjoyable and very healthy!

I hate running on the treadmill too! But a lot of other blogs list different interval series….those plus an iPod really make a difference. I’ve discovered it to help me increase my speed and find a good tempo. Running with people also helps a lot – I try to run with a friend or a local running club during the week. They are also a lot of fun to train with sometimes!
I have an iPod, and yet I never use it!! I need to get some music on that thing and start using it to my advantage!
I came across your blog from your comment on Girl Meets Life. I had to comment because our lives seem too similar! Haha, my name is Kristen, I just got married and am living in a new city in the midwest andddddd it looks like we have the same bowls and plates?! weird.
Anyway, my tip for making a treadmill run 100X better is planning it around one of your favorite TV shows

We had tilapia last night, too! Just broiled with a bit of tuscan herb seasoning. It’s delish!
Whenever I get a haircut I always feel a lot different at first, even though I usually only get 2-3 inches off (that isn’t a lot compared to how long my hair is). No one can tell when I’ve cut my hair. But I do it myself because I don’t have any layers so it’s pretty easy.
But anywho (goodness, enough about me! this is YOUR blog!), your hair looks awesome!

I love this dressing, very similar to my “go-to” salad of red wine, evoo, salt, pepper, garlic, & the secret awesome-ness of dill… best with romaine/tomato/cucumber – YUM!!
Yum!! Now with the garlic, do you just use minced raw garlic? (Still a newbie, here!

I just used minced/powdered garlic!! (as a side note for “fresh” garlic – I always freeze my whole peeled cloves and just chop them from the freezer when I need them so to avoid smelly fingers)
