Grown-Up Grilled Cheese.

If you haven’t picked up on this yet, my blog should not be considered a “healthy eating” blog.

Instead, I would prefer to call it a “balanced living” blog. Winking smile  I eat healthy, I workout, but I also have no problem whatsoever with treating myself.

I say this as a preface, as I’m about to share my Saturday eats … which certainly wouldn’t qualify as “healthy.”  But they sure were tasty!! Smile

Breakfast was nothing to talk about, but my lunch was pretty awesome.

Hello, friend.

Everybody loves a grilled cheese.  But today I decided to kick it up a notch. 

The inspiration?

Leftover pesto. Red heart

Chicken Pesto Grilled Cheese Sandwiches

(Serves 2)

Ingredients:

  • 4 slices whole wheat bread
  • Approximately 1 tbsp butter
  • Approximately 2 tbsp pesto (I used store-bought pesto, found in the refrigerated section of any grocery store.)
  • 4 slices provolone cheese
  • Approximately 1/2-3/4 cup shredded mozzarella cheese
  • Several thin strips of chicken breast (I used precooked chicken found in the refrigerated section of my grocery store.)

Directions:

  • If your chicken in the precooked kind and it’s been in the fridge, heat it up for just a few seconds in the microwave, so it’s not cold.

  • Butter one side of each piece of bread.
  • Put two pieces of bread butter-side down onto a skillet, set on medium heat.
  • Spread half of your pesto onto these slices of bread.

  • Top each piece of bread with a slice of provolone.  Then add chicken and shredded mozzarella cheese.

  • Add another slice of provolone on top.
  • Spread the rest of the pesto on the other two slices of bread, and top the sandwiches with those slices (buttered-side up).
  • Cook the sandwiches until they are browned on each side and the cheese has melted.  It will only take a few minutes per side.

And that’s it!

Slice each sandwich in half and serve with a side of chips (my pick), raw veggies, or applesauce (Brandon’s pick! Winking smile).

This grilled cheese was delicious.  The cheese was gooey, the bread was crispy, and the pesto added an amazing flavor. Smile

If you want to make it a little healthier, you could always leave the butter off the bread and use just one slice of provolone per sandwich.  I still think it would be really tasty.

Later that night, I made the orange chicken that Brandon loves so much.

And then came the best part of the day.

Brandon and I both LOVE this ice cream.  So imagine my sheer joy when I saw that it was on sale at the store on Friday!! Open-mouthed smile

You can read the description for yourself.  But let me tell you … every word is true.  There are chunks of red velvet cake throughout the entire pint, and you can taste the cream cheese in each bite.

    I’m a little obsessed with grilled cheese and yours just looks amazing!!! Too funny because i just put pesto on my pizza last night instead of tomato sauce, mmmm!
    I will have to try and find that icecream – but i’ll be honest, i’m not sure i’ve ever ate red velvet cake before, lol – the shame :)

    I had a toastie last night for dinner too. With stacks of mozzarella, tomato, beetroot and roast capsicum. (Leftover odds and ends haha)
