First of all, I have to say thank you all SO much for your kind words and congratulations on Monday’s post. You guys are the best!!

My apologies to our hostess, Jenn … my “sensible snacking” may be a bit lacking this week. With our plethora (I love that word) of houseguests and our busy schedules, I haven’t had much time to snack throughout the day. But I’m working on improving in this area!
Breakfast:
This is actually a picture from a couple of weeks ago. Subtract the iced coffee from the picture, and you have what I ate yesterday. Believe it or not, I’m trying to give up caffeine. It’s been a week since I quit cold turkey. Not going to lie, Advil was consumed the first few days. But I’m doing better now!
(And I actually mixed it up a little with this breakfast … I used my dark chocolate peanut butter instead of regular peanut butter! Things are getting crazy around here, folks.
)
Lunch Part 1:
Scrambled eggs with ketchup and half a sandwich thin with cookie butter!
Lunch Part 2:
Peaches, pineapple, and blueberries topped with organic vanilla yogurt and granola.
Dinner:
Spicy turkey and kale lasagna. This recipe was a huge success. Brandon and I both loved it, and it was really healthy! Sorry, I have to save the recipe for a guest post … but I’ll let you know when it’s up! ![]()
Dessert:
Cake batter blondies!
I made these blondies last Thursday, after my original attempt at red velvet cupcakes was an epic fail.
It was my first time baking in my new oven, and I have discovered that our oven temperature is off. If a recipe calls for a 350 degree oven, I need to do closer to 325. But I didn’t know that. So my poor cupcakes got way over baked. So sad.
But never fear! I had a back-up plan!
Doesn’t Funfetti make everything better? I mean, even the box makes me smile. Just look how happy the Dough Boy is!
I pretty much followed Gracie’s cake batter blondie recipe when making these. However, I used Funfetti cake mix instead of yellow cake mix, which meant I didn’t have to use any extra sprinkles. And I used vegetable oil instead of canola oil.
Make sure you listen to her advice, and don’t cut them until you’ve let them cool for 20 minutes. I promise that they’re worth the wait!!
Warning: These blondies are freakishly addicting. Eating just one is highly improbable.

Thoughts on The Bachelorette?
Jef and Sean are still my favorites. And although Ryan seems like a total cheeseball, I also think he was the victim of bad editing. Doesn’t make him less of a cheeseball, but I noticed several things in the past couple episodes that seemed like they were edited to make him look even worse!




That turkey and kale lasagna looks amazing! I can’t wait for the recipe. My husband and I loved kale chips and I am always looking for new ways to incorporate the green..! Sean, Jef and Arie are still my favorites, but I am a little concerned about the Arie situation. In previews for next week, it sounds like Emily finds out a secret about Arie, so I guess we’ll see if that changes her feelings towards him!

I’ve known about the Arie secret for a while now, because I read realitysteve.com (don’t go there unless you want spoilers!). That’s why I wasn’t as in to him as other people were!
The lasagna looks so good! Now that you’ve gotten me into kale, I’m excited for that recipe
I still love Sean (for myself of course
), and I’m down to my last guy on my Fantasy team — Doug. And I don’t think he’s going to make it much longer…

Do you have a convection oven? If so that’s probably why it’s off.
I have no idea haha! Our oven is gas, that’s all I know!
I’m all for Sean and Arie. They are tied in my opinion! Best thing I’ve eaten? 1/2 of a Klondike Reese’s bar! Delish.

Think I’m going to search for kale seeds for my Tower Garden. You r coming up with some interesting recipes! Tried the ice cream from bananas. Goofed and added milk so it was more of a shake. But yummy. Try hot sauce on scrambled eggs sometime. Surprisingly good.
Oh my goodness I’ve made those blondies!!! They are AMAZING haha. The best thing I’ve eaten so far this week were the pita pizzas that Chris and I made. Hope you have a great day love!

And funfetti – oh it is indeed my favorite! Whenever I make a treat for my students, I selfishly use funfetti 75% of the time. I don’t think they mind too much, though!

i’m trying to give up coffee too (as you know), but i don’t think i could go cold turkey! go you! i’m gradually cutting back, and that’s even hard. and you’re right, funfetti certainly makes everything better! we used to make funfetti cakes all the time in college. loved ‘em!
I’m not saying going cold turkey is easy haha … I just didn’t want to buy more coffee, and I was almost out.
I bought some of that cookie butter from Trader Joe’s a couple of weeks ago and oh my goodness, it’s so good!
And those funfetti cookies look absolutely amazing. If I could find a way to make them gluten-free, I’d bake them up in a heart beat!

You know my oven temp is off – if it’s supposed to cook at 350, we set the oven to 225. If it’s supposed to cook at 450, we set the oven to 365. It’s a crazy guessing game ha.
The best thing I’ve eaten? Well, I’ve had some GREAT food this week – shrimp tacos, homemade french bread pizzas, mango avocado ice cream, smoothies…I can’t pick just one.
