First of all, I have to say thank you all SO much for your kind words and congratulations on Monday’s post. You guys are the best!!

My apologies to our hostess, Jenn … my “sensible snacking” may be a bit lacking this week. With our plethora (I love that word) of houseguests and our busy schedules, I haven’t had much time to snack throughout the day. But I’m working on improving in this area!
Breakfast:
This is actually a picture from a couple of weeks ago. Subtract the iced coffee from the picture, and you have what I ate yesterday. Believe it or not, I’m trying to give up caffeine. It’s been a week since I quit cold turkey. Not going to lie, Advil was consumed the first few days. But I’m doing better now!
(And I actually mixed it up a little with this breakfast … I used my dark chocolate peanut butter instead of regular peanut butter! Things are getting crazy around here, folks.
)
Lunch Part 1:
Scrambled eggs with ketchup and half a sandwich thin with cookie butter!
Lunch Part 2:
Peaches, pineapple, and blueberries topped with organic vanilla yogurt and granola.
Dinner:
Spicy turkey and kale lasagna. This recipe was a huge success. Brandon and I both loved it, and it was really healthy! Sorry, I have to save the recipe for a guest post … but I’ll let you know when it’s up! ![]()
Dessert:
Cake batter blondies!
I made these blondies last Thursday, after my original attempt at red velvet cupcakes was an epic fail.
It was my first time baking in my new oven, and I have discovered that our oven temperature is off. If a recipe calls for a 350 degree oven, I need to do closer to 325. But I didn’t know that. So my poor cupcakes got way over baked. So sad.
But never fear! I had a back-up plan!
Doesn’t Funfetti make everything better? I mean, even the box makes me smile. Just look how happy the Dough Boy is!
I pretty much followed Gracie’s cake batter blondie recipe when making these. However, I used Funfetti cake mix instead of yellow cake mix, which meant I didn’t have to use any extra sprinkles. And I used vegetable oil instead of canola oil.
Make sure you listen to her advice, and don’t cut them until you’ve let them cool for 20 minutes. I promise that they’re worth the wait!!
Warning: These blondies are freakishly addicting. Eating just one is highly improbable.

Thoughts on The Bachelorette?
Jef and Sean are still my favorites. And although Ryan seems like a total cheeseball, I also think he was the victim of bad editing. Doesn’t make him less of a cheeseball, but I noticed several things in the past couple episodes that seemed like they were edited to make him look even worse!
