How is everyone doing this week? Addie and I have been busy busy so far! We had a pediatrician appointment on Monday (she’s 12 pounds, 9 ounces now!), then today we visited some of my former co-workers! It was great seeing everyone. It made me miss work a little, but I still know that being at home is where I’m meant to be right now!
So anyway, I have an awesome recipe today!
My mom gave me this recipe for chicken curry. She’s always loved good curry, but I’ve been a little hesitant to try it. This dish, however, made me a believer!
Hawaiian Chicken Curry
(Makes about 4 servings)
- 5 tbsp. butter
- 1 small onion, finely chopped
- 6 tbsp. flour
- 4 heaping tsp. curry powder *
- 1 1/2 tsp. salt
- 1 1/2 tsp. sugar
- 1/4 tsp. ground ginger (or you can use fresh)
- 1 tsp. chicken bouillon + 1 cup water (or you can use 1 cup chicken broth, but I find the bouillon to be more flavorful)
- 2 cups milk
- 2 1/2 cups cooked, cubed chicken (I use 2 medium-sized chicken breasts. I bake them at 350 degrees for about 25 minutes. I also salt and pepper the breasts before I put them in the oven.)
- Basmati rice, for serving
- Sliced almonds, for serving
- Raisins, for serving
* Note: I used a curry powder that wasn’t spicy but had really great flavor. My mom says it’s really important to use a good curry powder, if you want a flavorful dish!
- In a large sauté pan, melt the butter over medium heat. Add the onions and sauté for just a couple of minutes, until the onions are softened.
- Meanwhile, mix the flour, curry powder, salt, sugar, and ginger in a small bowl. Once the onions are softened, add the mixture into the pan and stir everything together. It will form something that looks like paste.
- Next, slowly add the broth you made with the bouillon and water, stirring continuously. Then slowly add the milk, continuing to stir. At this point, it will look like the mixture is a clumpy mess! But keep stirring, and it will start to come together into a thick, silky sauce!
- Once the mixture has come together and thickened (it may take several minutes of stirring), add the cooked chicken and stir everything together. Turn down the heat to low and let everything simmer for about 30 minutes, stirring occasionally.
- In the meantime, cook the Basmati rice according to package’s instructions.
- When everything is ready, put some of the rice on your plate, followed by the curry mixture. Sprinkle raisins and almonds on top and serve! (I also like to add a Hawaiian sweet roll on the side for dipping!)
This is quickly becoming one of my new favorite meals. It’s quick, easy, and incredibly flavorful!
