Food Trucks Rock (plus some exciting news!).

Another Monday, another weekend with family gone in a blur!

But first, I want to share some exciting news with all of you!

… I got a full-time job! Thumbs upThumbs up

For those who have been following me for a while, you know that when we moved to Atlanta, I wasn’t able to find an immediate, full-time school psychology position.  I’ve been doing some psych work on a part-time basis, while also working at Lifetime Fitness.  But I really wanted to find a full-time position for next school year.

Well, mission accomplished!  I received a formal offer with a local school district last week, and I could not be more excited and thankful!  I realize how difficult jobs are to come by these days, and I feel abundantly blessed to have this new opportunity! Smile

OK, moving on!  Brandon’s parents came to visit us this weekend!

On Friday, Brandon and his dad went golfing, while his mom and I went shopping for more house-related items.

After several hours and three one too many trips to Bed, Bath, & Beyond, we met up with the guys at Chili’s for lunch.

I devoured my shrimp tacos with avocado.  Delicious, but gone way too quickly!

Friday night, we took them to Suwanee Town Center to eat at Mellow Mushroom.

Yep, the same thing we did with my mom last weekend.  We’re a creative bunch, aren’t we?

Cheri and I started dinner by splitting a spinach salad.

Then we split the House Specialty Pizza.

It was incredibly tasty, just like every other pizza I’ve had at Mellow Mushroom.

And I’m sure this comes as no surprise, but after dinner, more frozen yogurt was consumed. Winking smile

(P.S. I just discovered a new frozen yogurt shop less than a mile from our house.  This could be trouble.)

On Saturday, we did more house-related errands, including buying patio furniture!  Then Saturday afternoon, we all hopped in the car and headed to IKEA.

This was my first ever IKEA experience.  And I gotta say, I was a little scared.  Why did no one warn me what a zoo this place is?? Disappointed smile

But they did have some pretty cool stuff.  We ended up getting two end tables for our bedroom, a painting for our dining room, and a bamboo plant for one of the guest bathrooms.  Score!

After surviving sensory-overload at IKEA, we were all starving.  For dinner, we headed to the Atlanta Food Truck Park.

If you watch as much Food Network as I do, you know that food trucks are no longer just for hamburgers and hot dogs.

You can find some pretty tasty, gourmet treats hidden in these trucks!

The Atlanta Food Truck Park just opened a few weeks ago, but word has gotten out quickly!  This place was seriously hopping.  We were lucky to even find a parking space!

After checking out all of the trucks, I decided to choose Yumbii for my dinner.

According to their website, Yumbii is Atlanta’s “first and finest food truck.”

Their dishes are a fusion of Mexican and Asian flavors, and everything on their menu sounded awesome!

I ended up selecting their Fish Taco: A panko-crusted tilapia topped with hoisin-tartar sauce, a spicy Korean BBQ sauce, and soy sesame vinaigrette salad.

On the side, I had their Sesame Fries: sprinkled in a sesame splash with their special spice mix.  Served with chipotle-ketchup.

The whole meal was incredibly flavorful and I loved every mouthful.  But the fries with that chipotle-ketchup stole my heart.   I could have eaten a bucket of those fries!

The rest of the crew all ordered from Sweet Auburn BBQ.  I didn’t try any of their dishes, but everyone said the BBQ was very tasty!

For dessert, we had to head to the King of Pops.

Remember how our church was selling these popsicles for a fundraiser?  At church, I had already tried the chocolate sea salt, the orange creamsicle, and the Arnold Palmer.

This time, I chose the Key Lime Pie flavor. Smile

(I’m so weird).

This flavor was just as delicious as the others.  It even had a big piece of graham cracker in the popsicle!

I think the chocolate sea salt is still my favorite, but really, you can’t go wrong with any of their flavors!

And because I didn’t have enough sugar that day, I also bought a strawberry cupcake at Yum Yum Cupcake to bring home.

I ate it that night, while sitting out on our new patio furniture!
