Rather than sharing one day of eats with you today for WIAW, I thought I’d share the dinners I’ve been enjoying the past week.
Well, I’ve enjoyed most of them.
Dinner #1 “Slow Movin’ BBQ Chicken”
I wrote about this meal a long time ago … like, when the blog was just a baby-blog.
You can click on the link above for the original “recipe” (I use that term loosely, because it’s so darn easy).
But this time, I actually did things a little differently. I just threw 3 chicken breasts into the slow cooker with some salt and pepper and covered them with water (just enough so that they were fully immersed). I set the slow cooker to “low” and let them cook all day. When I got home that night, I took out the chicken and shredded it in a bowl, added BBQ sauce, and that was that!
The above picture is actually an old one. This time when I made the chicken, I served it on whole-wheat sandwich thins. And I made a sweet potato for the side. Delicious and crazy easy!
Dinner #2: The Pinterest-fail.
I found this recipe for Crock Pot Beef and Broccoli on Pinterest. And I had high hopes for it, because the commenters left good reviews.
Sadly, it was a massive disappointment. It was way too salty and really lacked any other flavor.
It was so bad, that we threw out all of the leftovers. And if you know me at all, you know how much that pained me to do. I HATE wasting food (and money!).
I don’t want to share the link to the original recipe because I don’t want to be unkind to the original creator. And who knows. Maybe it was something I did wrong?
But if you find a recipe for crock pot beef and broccoli on Pinterest, know that you’ve been warned.
Dinner #3: The Pancake Success Story!
… but the last time I tried making good, old-fashioned pancakes from scratch, it was a hot mess.
This time, however, I am so excited to say that we found a winner!
When I decided that I wanted a good pancake recipe, I headed over to The Pioneer Woman’s blog.
I figured that with her down-home, feel-good style of cooking, she was bound to have a great pancake recipe.
And I was right!
I followed this recipe to a T.
Do exactly as she says, and I promise you will have some of the best pancakes in the history of pancake-making.
With the combination of cake flour, lots of vanilla extract, and butter, you feel like you’re eating a piece of cake. But with less sugar.
I don’t know if that makes any sense. Just trust me, and try the recipe.
I topped my stack with peanut butter and plenty of syrup. So, so good.
The recipe made a ton of pancakes, so after Brandon and I had our fill, I froze the rest. Since then, I’ve had a few mornings where I enjoyed pancakes, instead of my normal peanut butter and banana on toast!
Dinner #4: Date night at Armando’s.
Last Friday night, Brandon and I enjoyed a much-needed date night.
We went to Armando’s, which serves Latin and Caribbean dishes.
Brandon got the lobster tacos, while I went with the calamari tacos. Then we swapped one taco each, so that we could try a little of both.
Both tacos were delicious and super fresh. I also loved the never-ending supply of chips and salsa that was provided at Armando’s. It was a definite win, and I’m sure we’ll be back again soon!
Dinner #5: Dinner in Decatur with friends.
On Saturday night, we met our friends Todd and Shannon for dinner at Leon’s Full Service in Decatur.
As you can see, they also brought their little one, Amelia.
She and Addie are going to be BFF in just a couple of months.
Leon’s was a super cool place with a relaxed but funky atmosphere.
And their menu was pretty funky, too!
Todd started the evening by ordering “bacon in a glass,” served with a side of house-made peanut butter, for the table to share.
Bacon in a glass. With peanut butter. Every pregnant woman’s fantasy.
For my main course, I chose a burger. It included grass-fed beef, cheddar cheese, house-made catsup & mustard, bread & butter pickles, and baby iceberg lettuce.
On the side, I had an order of their “pub frites” (a fancy way of saying French fries), with smoked tomato mayo dipping sauce.
Leon’s is known for their fries with various dipping sauces. Between of the four of us, we tried the garlic aioli, Leon’s BBQ, fresh horseradish mayonnaise, and my smoked tomato mayonnaise.
They were all delicious.
For dessert, Brandon and I split the Chocolate-Nutella Candy Bar.
It was topped with hazelnuts and seas salt.
The candy bar was rich and decadent. The perfect end to a perfect meal!
Well that about wraps up my WIAW! Other than that one hiccup, I’d say it was a pretty delicious week of eats!
