A Week of Dinners: The Good, the bad, and the burger.

Rather than sharing one day of eats with you today for WIAW, I thought I’d share the dinners I’ve been enjoying the past week. 

Well, I’ve enjoyed most of them. Thinking smile

Dinner #1 “Slow Movin’ BBQ Chicken

I wrote about this meal a long time ago … like, when the blog was just a baby-blog.

You can click on the link above for the original “recipe” (I use that term loosely, because it’s so darn easy). 

But this time, I actually did things a little differently.  I just threw 3 chicken breasts into the slow cooker with some salt and pepper and covered them with water (just enough so that they were fully immersed).  I set the slow cooker to “low” and let them cook all day.  When I got home that night, I took out the chicken and shredded it in a bowl, added BBQ sauce, and that was that!

The above picture is actually an old one.  This time when I made the chicken, I served it on whole-wheat sandwich thins.  And I made a sweet potato for the side.  Delicious and crazy easy!

Dinner #2: The Pinterest-fail.


I found this recipe for Crock Pot Beef and Broccoli on Pinterest.  And I had high hopes for it, because the commenters left good reviews.

Sadly, it was a massive disappointment.  It was way too salty and really lacked any other flavor. 

It was so bad, that we threw out all of the leftovers.  And if you know me at all, you know how much that pained me to do.  I HATE wasting food (and money!).

I don’t want to share the link to the original recipe because I don’t want to be unkind to the original creator.  And who knows.  Maybe it was something I did wrong? 

But if you find a recipe for crock pot beef and broccoli on Pinterest, know that you’ve been warned. Winking smile

Dinner #3: The Pancake Success Story!

So I’ve made some good pancakes in my day.  Pumpkin pancakes, blueberry oatmeal pancakes, pumpkin chocolate chip pancakes

… but the last time I tried making good, old-fashioned pancakes from scratch, it was a hot mess.

This time, however, I am so excited to say that we found a winner!


When I decided that I wanted a good pancake recipe, I headed over to The Pioneer Woman’s blog

I figured that with her down-home, feel-good style of cooking, she was bound to have a great pancake recipe.

And I was right!

I followed this recipe to a T.

Do exactly as she says, and I promise you will have some of the best pancakes in the history of pancake-making. Winking smile

With the combination of cake flour, lots of vanilla extract, and butter, you feel like you’re eating a piece of cake.  But with less sugar.

I don’t know if that makes any sense.  Just trust me, and try the recipe.


I topped my stack with peanut butter and plenty of syrup.  So, so good.

The recipe made a ton of pancakes, so after Brandon and I had our fill, I froze the rest.  Since then, I’ve had a few mornings where I enjoyed pancakes, instead of my normal peanut butter and banana on toast!

Dinner #4: Date night at Armando’s.

Last Friday night, Brandon and I enjoyed a much-needed date night.

We went to Armando’s, which serves Latin and Caribbean dishes.


Brandon got the lobster tacos, while I went with the calamari tacos.  Then we swapped one taco each, so that we could try a little of both.

Both tacos were delicious and super fresh.  I also loved the never-ending supply of chips and salsa that was provided at Armando’s.  It was a definite win, and I’m sure we’ll be back again soon!

Dinner #5: Dinner in Decatur with friends.

On Saturday night, we met our friends Todd and Shannon for dinner at Leon’s Full Service in Decatur.


As you can see, they also brought their little one, Amelia. 


She and Addie are going to be BFF in just a couple of months. Winking smile

Leon’s was a super cool place with a relaxed but funky atmosphere. 

And their menu was pretty funky, too!


Todd started the evening by ordering “bacon in a glass,” served with a side of house-made peanut butter, for the table to share.

Bacon in a glass.  With peanut butter.  Every pregnant woman’s fantasy.

For my main course, I chose a burger.  It included grass-fed beef, cheddar cheese, house-made catsup & mustard, bread & butter pickles, and baby iceberg lettuce.


On the side, I had an order of their “pub frites” (a fancy way of saying French fries), with smoked tomato mayo dipping sauce.

Leon’s is known for their fries with various dipping sauces.  Between of the four of us, we tried the garlic aioli, Leon’s BBQ, fresh horseradish mayonnaise, and my smoked tomato mayonnaise.

They were all delicious. Thumbs up

For dessert, Brandon and I split the Chocolate-Nutella Candy Bar.


It was topped with hazelnuts and seas salt. 

The candy bar was rich and decadent.  The perfect end to a perfect meal!

Well that about wraps up my WIAW!  Other than that one hiccup, I’d say it was a pretty delicious week of eats!

    I will def try the pancake one!! Those Pioneer Women so it right! I made the quickest dinner ever yesterday…. Stuffed Baked Sloppy Joe’s! Gary is so picky and asked me to make it again. Make your reg Sloppy Joe’s… Get the tube of homestyle buttermilk biscuit by Pillsbury I bought the grande with 8. Flatten out the biscuit…. Place 2 tbsp of sloppy Joe on the flattened biscuit add a pinch of chedder cheese… Fold it over once and seal the edges… Bake at 350 for 10-14 min light golden brown. def everybody approved. I got this from Pinterest.

    Now I’m officially craving pancakes! We love Armandos – yummo and pretty close to my house!! A mom-friend’s husband is the owner and chef at Leon’s in Decatur – so glad to hear you guys enjoyed it : ) I’ll have to pass the good words along!

    “It’s so fluffy!” Sorry for the Despicable Me quote, I just found it particularly fitting to those incredibly fluffy-looking pancakes. Seriously, just like the ones from the diner.

    Definitely had my fair share of pinterest fails. I love the pintester website :)

    That’s why sometimes I’m hesitant to share my recipes–I’m not an exacto-cook or baker so how I make something might be different from how someone else might.

      I know … one of my recipes was shared by someone on Pinterest, and the girl said that she found it to be “horrible.” I couldn’t believe it, because it is one of our favorites! I don’t know if she did something wrong, or if she just has very different taste!

    Ok, so you have confirmed that I NEED a slow-cooker/crock pot in my life!!! Would love to try out Dinner #1 & the pancake recipe looks great too! The best thing I’ve eaten this week is actually a breakfast meal… pb&co’s white chocolate peanut butter on a slice of cinnamon swirl bread with half a banana sliced, on top! Absolute HEAVEN after my morning run!! :-)

    I definitely would’ve ordered the bacon in a glass! I’m a huge fan of bacon and pb together (I’ve even put pb on a blt before…don’t judge). All your recipes look delicious, and I’ll have to try out those pancakes. Pioneer Woman has amazingly comforting recipes. Miss you!

      I always wonder how the clothing situation works on that show. Those girls must have had to pack like 10 suitcases of clothes … bathing suits, gowns, casual clothes, etc. Yet when you see them leaving the show, it’s only with one suitcase! Yeah, right!

    I like AshLee (or however you spell it) and Leslie and Desi (I think?) I think it will be those three for sure at the end. That dumb Tierra is just around for the drama, I’m sure she will be gone soon. I always wonder, if he want’s to know so bad if what the girls are saying about her is true, can’t he go back and watch video? I mean I’m sure they won’t let him to increase the drama on the show, but that seems like an obvious solution to me! ;-)
